The must is immediately separed from skins to enhance freshness and fragrance.The wine is placed in tanks at temperature controlled -3°C for 10-15 days.The fermentation with selected yeasts at temperature controlled, it is accomplished by raising the temperature up to which the sugar is transformed int alcohol until reaching 5,5% vol. It is finally cooled at -4°C for 8/10 days to stabilize before filtering and bottling.
